Dogfish Head Brewery in Delaware began brewing small batch beer in 1995 making 12 gallons of brew at a time for their brewpub operation. Fast forward to today and they are now distributing nearly 20 brews across half the United States of America! Maybe they are shooting to conquer all the places in Johnny Cash's, "I've been Everywhere"! Reno, Chicago, Fargo, Minnesota, Buffalo, Toronto, Winslow, Sarasota, Wichita, Tulsa, Ottawa, Oklahoma, Tampa, Panama, Mattawa, La Paloma, Bangor, Baltimore, Salvador, Amarillo, Tocapilla, Baranquilla, and Perdilla, I'm a killer! And that's just the first verse! Lofty goals! Maybe if we get bored later we can try to finish the list of cities from the song!

Blend Dogfish Head's 60 Minute IPA, their 90 MInute IPA, add a touch of maple syrup, bottle condition, and you get Dogfish Head 75 MInute IPA. Sound tasty? Let's find out!

First, everything we know about this beverage: Released in January 2012, 7.5% ABV, 1 Pint 9.4 fl. oz, Maple Syrup, Dry Hopped with Cascade Hops and bottle conditioned.

Let's tap into the brew! A pour into my million dollar glass gives us a beautiful, huge, frothy, white head sitting on top of a pale amber honey ale. Long lasting head that leaves excellent lacing on the way down.

The aroma is definitely influenced by the cascade hops producing a sweet hoppy citrus smell. A couple good swirls really seems to bring out the citrus. This is making me thirsty! Good thing I have a beer handy!

Tasting

The mouthfeel is full bodied and heavier than your average run of the mill IPA.

Light sweetness with grapefruit notes. Well into the beer I do get hints of the maple. I really expected more of the maple but it is not an upfront flavor. Dry hops bitterness on the finish. Well balanced brew.

Summary

Very good IPA! Slightly off-centered as advertised. $7.99 here in Ohio for a man sized bottle that should please any hophead. I can't vouch for use on pancakes. I would drink this in Boston, Charleston, Dayton, Louisiana, Washington, Houston, Kingston, Texarkana, Monterey, Faraday, Santa Fe, Tallapoosa, Glen rock, Black Rock, Little Rock, Oskaloosa, Tennessee to Tennessee Chicopee, Spirit Lake, Grand Lake, Devil's Lake, Crater Lake for Pete's sake!

Musical Pairing - Isn't it Obvious? The Man in Black. Johnny Cash "Unchained". I think this recording is one of his greatest works. Rick Rubin and Tom Petty really captured Johnny's essence. "I've Been Everywhere" though not written by Cash is a classic. This CD is a great collection of some very different facets of Johnny. From the heavy spiritual that reflects his religion, tailor made for that booming baritone to the cover of SoundGarden's "Rusty Cage" that highlights his ability to own any song he sang. This is Cash and deserves to be enjoyed with a good beer!
